While I think Thanksgiving sides are the most interesting part of the meal, you’ll never live up to the Rockwellian ideal of a perfect American holiday without a stunning, perfectly cooked and browned turkey. But it’s tough. Most of us only tackle a 10-20 pound bird once a year and the lessons we learn each November are lost to memory when the next year rolls around.

And if it doesn’t turn out perfect? Relax. The day is really about giving thanks for the time you’re sharing together. It doesn’t matter if your turkey is average when the people seated at the table are exceptional.
