Cider and Maple Glazed Sweet Potatoes
Roasted sweet potatoes are quickly finished with sweet tart cider, maple syrup and vinegar glaze.
2-3 medium sweet potatoes peeled and cut into 1/2 cubes, about 2 cups
3 tbs olive oil
1 tbs Guajillo or other chile powder
2 cups apple cider
¼ cup Maple syrup
1 bay leaf
1 sprig fresh thyme
1-2 tbs apple cider vinegar
2 cloves garlic
1 tsp chopped thyme
- Toss potatoes with 2 tbs oil and chile powder. Season with salt and pepper. Spread in a single layer on a sheet pan and place in a preheated 400F oven. Roast until tender, but not soft, and browning on edges.
- Add cider, maple syrup, bay leaf and thyme sprig to a small saucepan. Bring to a boil and reduce to a thin syrup. Remove bay leaf and thyme and season to taste with vinegar.
- Warm remaining tbs oil in a 12” skillet over medium heat. Add garlic and cook 30 sec. Add potatoes and cider sauce. Cook over medium-high heat, reducing sauce to a glaze that coats the potatoes. Season with salt, pepper and additional vinegar if needed. Serve sprinkled with fresh thyme.
